Crunchy Carrot Salad with Ginger Dressing p161

This salad has flavours of Japan, with the ginger, mirin, and rice vinegar it is sooo fresh and very light.





This simple, yet intensely delicious salad is perfect for a staple weekday dinner. Fast and yummy food..... my favourite!

I added chopped parsley to give it a bit more texture.




Tip: I would use this ginger dressing to dress kingfish sashimi. It would be magical.
